Cranberry Vodka Red Velvet Cupcakes with Cranberry Cream Cheese Frosting

This year, I’m thankful for Cranberry Stoli.

Cranberry Red Velvet Cupcakes (makes 24)

For the cupcakes:
1 red velvet cake mix (Duncan Hines)
3 eggs (whole)
1/2 cup oil
1 1/4 cup Cranberry Stoli Vodka

1 ½ cups dried craisins (soaked in 1 cup of Cranberry Stoli Vodka for at least a day)

Preheat the oven to 350
Reconstitute dried craisins and set aside to cool
Line your cupcake pans with cupcake papers
Combine cake mix and ingredients in a bowl
Beat on medium speed for about 2 minutes
Gently fold in cranberries
Fill cupcake papers 3/4 full
Bake for 15 minutes

Cranberry Cream Cheese Frosting

For the frosting
2 sticks of butter (softened)
1 package cream cheese (softened)
1 teaspoon vanilla
2 boxes (2 pounds) powdered sugar
3 Tablespoons Cranberry Stoli Vodka

Mix butter and cream cheese in mixer until creamy
Add vanilla
Slowly add powdered sugar, about 2 cups at a time
Add 3 Tablespoons Cranberry Stoli Vodka
Mix until blended

Once cupcakes have cooled, pipe frosting onto cupcakes. Refrigerate until ready to serve.
