Baking with Booze

For each layer of cake, take one box of white cake mix and substitute a flavored vodka for the water. Follow the rest of the directions on the cake mix. Then add food coloring to each mix.
I used approximately 1 ½ cups of batter for each layer and baked each in a greased 8” round cake pan. I baked each layer for 15 minutes in a 350 degree oven. Once the layers were cooled, I leveled them and stacked using cool whip in between the layers. Once the cake is assembled, it should be refrigerated until ready to serve.
For this cake, I went with a slightly muted Roy G Biv color scheme. It is a house rule that it can’t be considered a rainbow cake unless there are 7 layers.
The color-flavors combinations I used were
Red – Cherry
Orange – Orange
Yellow – Pineapple
Green – Lime
Blue – Raspberry
Indigo – Coconut
Violet – Grape
Be prepared to make either a second 7 layer cake or 7 dozen cupcakes or 14 dozen mini-cupcakes (or some combination of the 3) if you make all 7 cake mixes. I did try to make a tie dye cake afterwards. The colors turned out great, but the flavors were too mixed up for my taste.
